Spanakorizo — Greek Spinach Rice

A comforting one-pan Greek spinach-and-rice dish with lemon and dill.

Ingredients

Dry goods

Rice300 g

Produce

Spinach500 g
Onion1 pcs
Spring onions4 pcs
Lemon1 pcs
Dill1 bunch

Tins & jars

Vegetable stock600 ml

Spices & condiments

Olive oilto taste

Method

Soften the onion and spring onions in olive oil.
Add the spinach and wilt down.
Stir in the rice, then the stock; simmer covered ~20 min until rice is tender.
Finish with dill, lemon juice and a good glug of olive oil.
