Oven Ratatouille with Feta & Eggs

A baked vegetable ratatouille topped with feta and baked eggs.

Ingredients

Produce

Aubergine1 pcs
Courgette2 pcs
Red peppers2 pcs
Onion1 pcs
Garlic3 cloves

Tins & jars

Chopped tomatoes (tin)2 tins

Dairy & eggs

Feta150 g
Eggs5 pcs

Spices & condiments

Dried herbs1 tbsp
Olive oilto taste

Method

Heat the oven to 200C. Chop the vegetables into chunks.
Toss with oil, garlic and herbs in a baking dish; pour over the tomatoes.
Bake 30 min, stirring once.
Crumble over feta, make wells and crack in the eggs; bake 8–10 min more until set.
