Lentil & Vegetable Curry with Rice

A filling one-pan lentil curry — entirely from pantry staples.

Ingredients

Dry goods

Red lentils300 g
Rice300 g

Tins & jars

Coconut milk (tin)1 tin
Chopped tomatoes (tin)1 tin

Produce

Onion1 pcs
Garlic2 cloves
Carrots2 pcs

Spices & condiments

Curry powder2 tbsp
Olive oilto taste

Method

Soften onion, garlic and diced carrot in oil.
Stir in curry powder, then lentils, tomatoes and coconut milk plus a splash of water.
Simmer ~25 min until lentils are soft, stirring occasionally.
Meanwhile cook the rice. Season the curry and serve over rice.
