Greek Chicken & Vegetable Traybake

Everything roasted in one tin — chicken, potatoes, peppers and lemon.

Ingredients

Meat

Chicken thighs8 pcs

Produce

Potatoes700 g
Red peppers2 pcs
Red onion2 pcs
Lemon1 pcs
Garlic4 cloves

Spices & condiments

Dried oregano2 tsp
Olive oilto taste

Method

Heat the oven to 200C. Cut potatoes, peppers and onion into chunks.
Toss everything in a roasting tin with oil, oregano, garlic and lemon.
Roast 45–50 min until the chicken is cooked and the potatoes are golden, turning once.
Squeeze over lemon and serve.
